Sauces, Dressings, Vinaigrettes

These are some of my favorite sauces, pestos, dressings and the like that enliven the simplest dishes.

 

Basic Vinaigrette: for salad greens, slaws, cooked or raw vegetables, steak salads

 

Chili Tahini Sauce: for bowls of beans, grains, roasted and/or raw vegetables, herbs

 

Cilantro Yogurt Sauce: for grains, beans, roasted veg, vegetable pancakes/fritters, meatballs, pita sandwiches

 

Ginger, Lime, Cilantro Dressing: Delicious on rice, tofu, noodles, roasted vegetables, beef, chicken and seafood

 

Sriracha Mayo: Just mayo, Sriracha and a little soy sauce makes a wonderful sauce for vegetable pancakes like.

 

Tahini Parsley Sauce: on roasted sweet potatoes, winter squash or any roasted veg, pita sandwiches, meats, beans and grains, greens, bowls

 

Tahini Yogurt Dressing: for chopped salads, roasted veg, meats, etc.

 

Vietnamese-Style Dressing w/ Lime Juice and Fish Sauce: on rice noodle salads or green salads w/ tofu, roasted Brussels Sprouts or Cauliflower

 

Peanut Sauce: for salad rolls, roasted veg, rice, noodles, etc.

 

Aioli (garlicky homemade mayonnaise): to use as a dip, sandwich spread, in deviled eggs, with fish or meat, in a salad dressing, etc.

 

Salsa Verde (Italian Parsley Sauce): to dress roasted vegetables, as a soup garnish, sandwich spread, w/ eggs, etc.

 

Fresh Sorrel & Cilantro Sauce: Delicious with fish, eggs, grilled meat, roasted potatoes or sweet potatoes

Romesco Sauce: This Spanish sauce of toasted bred, tomatoes, peppers, garlic and vinegar is delicious with potatoes, fish, meat, egg.

 

Pumpkin Seed & Parsley/Cilantro Pesto: as sandwich spread, crostini topping, diluted with pasta cooking water to dress pasta, mixed with mayo as a dip, etc.

 

Cream Miso Dressing: Salads of all kinds, steamed or roasted vegetables, grains and vegetables, etc.

 

Soy Dipping Sauce: for scallion pancakes, rice dishes, roasted veg, grilled meat, etc.

 

Harissa (North African spice paste/sauce): wonderful with eggs, grains, beans, meat, fish, greens, etc.

 

Quick-pickled Onions: in green salads, bean salads, with rice, sautéed greens, on sandwiches, etc.

 

Pickled Jalapeños & Carrots (Escabeche): traditionally added to tacos but equally good with beans and rice, eggs, seafood, beef, on sandwiches, etc.

 

Stale Bread & Herb Sauce: on toasted bread with hardboiled egg, with meat or fish or any egg dish, etc.
