These are some of my favorite sauces, pestos, dressings and the like that enliven the simplest dishes.


Aioli (garlicky homemade mayonnaise): to use as a dip, sandwich spread, in deviled eggs, with fish or meat, in a salad dressing, etc.


Cream Miso Dressing: Salads of all kinds, steamed or roasted vegetables, grains and vegetables, etc.


Salsa Verde (Italian Parsley Sauce): to dress roasted vegetables, as a soup garnish, sandwich spread, w/ eggs, etc.


Greens & Herb “Pesto”: to toss with pasta, beans, sandwich spread, etc.


Harissa (North African spice paste/sauce): wonderful with eggs, grains, beans, meat, fish, greens, etc.


Quick-pickled Onions: in green salads, bean salads, with rice, sautéed greens, on sandwiches, etc.


Pickled Jalapeños & Carrots (Escabeche): traditionally added to tacos but equally good with beans and rice, eggs, seafood, beef, on sandwiches, etc.


Stale Bread & Herb Sauce: on toasted bread with hardboiled egg, with meat or fish or any eggs dish, etc.


Tahini Yogurt Dressing: for chopped salads, roasted veggies, meats, etc.


Vietnamese-Style Dressing w/ Lime Juice and Fish Sauce: on rice noodle salads or green salads w/ tofu, etc.
